    Corn is a native american plant, where its culture started in Mexico and now has spread to the whole world. Thousands of varieties and different colors exist around the world, being the most diverse among Latin America. Corn is a plant that grows very quickly, and soon after sowing will have cobs to harvest. The cobs may be eaten as baby corn, sweet corn (before getting ripe) or ground after cooking dried grains to make many different corn dishes.
    Corn is an excellent food source, containing high amounts of starch, making it a great source of energy for daily activities. Corn may be eaten made into Atol, tortilla, tamal de elote, tamal asado, tamal de maicena, tamal, popcorn, or as corn rice. Even it may be made into an alcoholic beverage called chicha.
    Maya Black corn is native to the area around lake Atitlán, located near the center of Guatemala, where it is used as a traditional variety planted by the tribes to make delicious black tortillas, which are very sweet in flavor. Its color is due to β-Carotene pigments in its tissue, which are a great vitamin source. These seeds have the most striking black color of any other corn from this country!
    Culture:
    sow the seeds 1 in. deep, and 8–12 in. apart, in rows that are 30–36 in. apart. Loose, well-drained soil is very important for good germination, but the plants won’t mind growing even on clay soils, a soil pH of 5–6 will give the best results. Plant a month after last frost once soil has warmed up, or in tropical regions, any time of the year, but preffered at the middle of the rain season so the cobs may dry on the dry season. Corn will grow very fast the first week and then it will slow down and gain speed as time goes on, watch out upon weeds around the plant. A useful technique is to inter-plant with a fast-maturing weed-suppressing crop (like beans or peanuts [check my store, I sell some] ) that will be harvested before the corn plants and will make more nitrogen available in the soil for the corn to take. Corn requires 100–120 days of hot weather and ample rainfall at the begining to yield a good crop. A nitrogen rich fertilizer would really help the plants applied on the first month of growth. Harvest is best to at 120 days from planting, generally on dry October climate but not after frost. Take the cobs and let them sun-dry for several days before pulling seeds off.
